Glazed gammon steaks traybake

Ingredients

  • 2 Espresso Martini glazed gammon steaks
  • 1 Onion
  • 2 Courgettes
  • 1 Bunch Asparagus
  • 2 Handfuls of cherry tomatoes
  • 1 Clove of garlic
  • Fresh rosemary
  • Olive Oil
  • Sea Salt
  • Pepper
  • Instructions

    These gammon steaks don't need anything added, they're glazed in Rouge's espresso martini marmalade. They compliment each other perfectly, so all you have to think about is what sides to have.

    1. Pre-heat the oven to 180 degrees.
    2. Chop all the veg to similar sizes and lay out on on an oven proof tray. Make sure they don't overlap.
    3. Finley chop the garlic or use a garlic press and add to the veg with a few sprigs of rosemary.
    4. Add a pinch of sea salt and pepper and a drizzle of olive oil and bake for 15 - 20 minute or until veg is cooked to your liking.
    5. While the veg is cooked, heat up a pan on the hob and fry the gammon steaks for 1 min on each side.
    6. Once steaks have caramelised a little. Place on a baking tray in the oven and cook for a further 10 - 15 mins, or until thoroughly cooked.
    7. Everything should be ready at the same time. Get everything out of the oven, serve and eat straight away.

    This traybake is nice and easy, you can use the veg we have or mix it up with whatever you have in the fridge. Keep it colourful, and some garlic, sea salt, pepper and olive oil and you're good to go. Remember if you're using root veg such as potatoes, carrots or beetroot you will need to increase the cooking time to around 40 mins.
